Yields 10 guests
For the Citrus Syrup (yields 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g caster sugar
Ingredients for the Premix (produces 850ml, enough for 10)
400ml decent vodka
100ml classic gin
150ml peach schnapps
200ml clementine cordial (from the recipe above)
A few cranberries, for garnish
Mandarin essential oil, for finishing
Instructions
To prepare the Cordial: Place the listed components in a pot, heat until it reaches a simmer, agitating so the sugar melts. Then, take off the stove and leave to reach room temperature fully. Transfer into a clean bottle, cap it and refrigerate it in the refrigerator, it can be stored for up to four weeks.
For the Cocktail Base: Mix all the liquids into one large bottle, let it rest for an hour, then filter it preferably using muslin, making it fully clarified.
When ready to serve: Add 85ml of your batch mix into your mixing glass containing ice, gently stirring lightly for about 60 seconds until cold. Strain into a chilled martini glass or a similar vessel, decorate with a few cranberries and complete it by giving it a brief mist with the mandarin essence above the glass.
